Back!!!

Yikes!! Long time no see!! Been pretty busy with school and cake making.  There are my two latest ones. The yellow was inpired by a photo from the net. Not sure who the picture belongs to but just giving credit when credit is due!! Thanks for sticking by!

Time has gone so fast, its unbelievable that my baby girl is already 4 years old and almost ready for school...but for right now, she's still mine!

Good News!!

So, I have been a little lost lately, but for a good reason.  Whats that? you may ask....

This is why!. yyyeeeaahhhh!!

Yes, thats me...and yes, thats a Chef coat. hahaha!

I am currently a full time student at IBC (Instituto de Banca y Comercio, Puerto Rico)


for Culinary Arts: Local and International cuisine.


Hopefully this year will go by fast.  I'm super excited to share with you guys

what I learn.  Having the best instructor yet, it will be a breeze.

Mini Cheesecakes (Recipe)


Hi Everyone!

This is a quick post Im making for my little sister who is absolutely in love with my Mini cheesecake recipe.  I have been meaning to post it, but....well, I have no excuse! Jejeje
I guess I have been pretty lazy lately. They are so yummy, I got her hooked.  Sorry baby sis!!

Cheesecake Ingredients:

1 1/2 Pks of 8 ounce cream cheese
1 C of sugar (16tbs)
1 egg
1 tsp vanilla extract
1/4 C of flour (4 tbs)

Graham cracker crust:

1 pk of graham crackers crushed
4 tbs of melted butter
1 tbs brown sugar

Directions:   Preheat oven to 350 degrees

1. Beat cream cheese until smooth. 
2. Add sugar and vanilla mix until incorporated.
3. add flour and mix lightly, set aside
4. to the crush graham crackers add butter and sugar, mix until incorporated
5. Line the cupcake tin with cupcake liners and press a tablespoon worth of crumbs
on the bottom of each and fill with cream cheese batter 2/3 of the way full.
6. Bake in a 350 degree for 15 minutes.  allow to cool and top with your favorite toppings

Piedra Escrita ( written rock) Jayuya, Puerto Rico


Today I was able to get to know a little about our "Taino" indian culture.  The Taino indians liked to
draw or carve on rocks near rivers and in caves like these...

Up stream was just amazing...


I find it super fascinating. And the view on the way down to River Saliente was breathtaking.



This here is the wooden walkway that takes you down to the river...My kids LOVED this part



I could have stayed here all day...


It was so beautiful, made all your worries disappear for a moment...



On our way to Jayuya, we had to go through the mountains...we found alot of small streams that were just amazing.



OH! and guess what! My husband found GINGER growing near the stream!!! I couldnt believe it!
Did I scraped and sniffed?....yes, yes I did. LOL!

 This was truly an amazing day spent with the people I love the most.

Homemade Oreos

 While exploring the smitten kitchen blog(thank you smitten!!!) again, I found a recipe for homemade oreos.  Now, these taste a little more like the oreo cakesters.The texture is "cake like" and really moist,  they are a winner in my books. They're very easy to make and they bake up in no time. oooh I love it!  You can find the recipe here.
